Foodie Friday … game day chili con queso dip

This chili con queso dip was a staple at every party my parent’s had when we were growing up. It was always a crowd favorite. I haven’t made it in years, but decided it would be the perfect pandemic super bowl snack (no big party, just my sisters and I outside socially distanced)

2-3 TBS canola or vegetable oil
2 medium onions, chopped
2 TBS flour
1 cup chicken broth
1 cup sour cream
two-4 ounce jars diced pimientos
one-7 ounce can diced green chiles
6 cups sharp cheddar cheese, grated

I use a large cast iron pan to make mine because it has deep sides. Heat the oil and add the onions. Cook, stirring until soft. Blend in the flour. Gradually add the broth and then the sour cream. Heat until bubbling and slightly thickened. Stir in the chiles and pimientos. Gradually add the cheese until melted.

I like to transfer it to an electric fondue pot and heat on low the day of the party. Back in the day, before “double dipping” became a no-no, people would just stand around the bowl and dip in together (which probably was not a good idea!) … but being covid safe, and let’s face it, more hygienic, I’ll have small bowls for everyone.

That’s it! Serve with some nice salty tortilla chips and voilà you have a party favorite!

  2. Over the years I must’ve eaten a GALLON of that dip at your Mom & Dad’s parties. I loved it so much I wasn’t even embarrassed about literally parking myself in front of the bowl! Everyone knew that if there was a party at the Egan’s ‘The Dip’ would be a certainty – usually followed by your Mom’s Li’l Smokies in barbeque sauce. Anyone who makes this will NEVER be sorry 🙂

    Very few jars / cans veg here as is mostly fresh or frozen.

    So, would two-4 ounce jars diced pimientos be similar to:
    250g roasted red peppers,(from a jar?) that you just dice yourself?

    one-7 ounce can diced green chiles
    – Would this be similar to sliced jalapeño (from a jar?) or fresh sliced jalapeño /poblamo chili?

    Chicken broth – would this be similar to chicken stock? From a cube / gel pot, made with boiling water? And an American cup, I think, would be nearly 250ml?
    And possibly same weight of the sour cream?

    And then the cheddar…! If it’s grated, it’s anything from 80g – 120g… According to Google!!

    Tablespoons are the same 😊
    Ounces are easy to convert into kg / grams😊
    Cups!! Are just a random, hop for the best, depending on whether it’s dry /wet/ thick / thin 😩😩

    1. Oh, never thought the ingredients wouldn’t be available, but let’s look at it.

      yes, roasted red peppers would work, just chop them up. I think the conversion would be 225 grams

      Diced green chiles are not as hot/spicy as jalapenos, so I think the poblano would be closer to the ones here. The canned variety are very soft, so I don’t know how a fresh one would work?

      Chicken stock or cube with boiling water is perfect substitute. the conversion I get is 236 ml

      1 cup is 250 ml, not a weight. You can’t go wrong with too much cheddar, I don’t think??
